Guar gum is a galactomannan which is essentially the ground endosperm of guar or cluster beans. The generic names for guar gum are guaran, guar, and Indian cluster beams. It is obtained from the seeds of the drought-tolerant plant Cyamopsis tetragonoloba, belonging to the Leguminosae family. Guar gum looks similar to locust bean gum, being largely made of composite carbohydrate polymer of galactose and mannose, however, with distinctive ratios of these two sugars. India, Pakistan, Sudan, and some parts of the USA produce the maximum volume of guar. India alone grows more than 80 percent of the total guar produced globally.
